Samidori (さみどり): The Essence of Uji’s Matcha Tradition

Samidori is a celebrated Japanese tea cultivar known for its luminous green color, velvety smoothness, and deep umami character. A cornerstone of Uji’s revered tea-making tradition, this cultivar embodies the meticulous craftsmanship and dedication that have shaped Japanese matcha for centuries.

First cultivated in 1939 by Koyama Masajirou (小山 政次郎) in Uji, Kyoto—a region synonymous with the pinnacle of matcha cultivation—Samidori was officially recognized in 1954 for its exceptional qualities. It remains a key varietal in the production of high-grade matcha and gyokuro, sought after by tea connoisseurs worldwide.

Characteristics

Samidori is a premium matcha cultivar from Uji, Japan, known for its vibrant green color, ultra-fine texture, and deep umami flavor. This cultivar is a hallmark of high-quality matcha, valued for its smoothness and complexity.

Cultivation process

Samidori matcha leaves are shade-grown for 20–30 days before harvest, a technique that enhances chlorophyll and amino acid levels, giving the matcha its rich green color and natural sweetness. After harvesting, the leaves are steamed, dried, and stone-ground into an ultra-fine powder, preserving their delicate flavors.

A Harmonious Flavor Profile

Creamy Texture – Samidori matcha is renowned for its velvety mouthfeel, making it an ideal choice for ceremonial-grade matcha.

🍵 Umami-Rich Depth – A naturally rich umami flavor, characteristic of premium matcha, is balanced with a touch of sweetness, elevating the tasting experience.

🍃 Low Bitterness – Unlike some cultivars, Samidori is known for its gentle, refined taste with minimal astringency, ensuring a smooth and enjoyable cup.

🌱 Balanced Sweetness – A delicate, lingering sweetness enhances the robust umami notes, creating a well-rounded and complex flavor profile.
